The Virtues of Arugula

Arugula’s small, tender leaves have a mildly peppery bite, perfect for salads, soups, and pasta dishes. Arugula is also known as rucola, rocket, and Italian cress. While popular for its taste, arugula is also known for its health benefits. It is rich in vitamins and minerals such as calcium, potassium, and vitamins A, C, K, and folate.

A relative of the crucifer family, arugula is a powerful anticancer food. Phytochemicals in arugula (particularly erucin) influence cancer cells, inducing cancer cell death and inhibiting cell migration.[i]

Look for dark green leaves that smell fresh and show no yellowing. Arugula is quite perishable, so use as soon as possible.

Raw arugula pairs well with fruit and cheese:
• Mix with fresh raspberries or strawberries and toasted pine nuts; toss with a light citrus vinaigrette
• Mix with fresh peach slices; toss with olive oil and peach-infused vinegar or white balsamic
• Dress with lemon juice (and some zest) and olive oil—add in white beans and garnish with shaved Parmesan
• Use instead of basil for a delicious pesto
• Top the salad with walnuts and grilled or poached chicken or steak
